Square Pizza Co., at 4508 Cass St, recently opened its doors to serve slices in Pacific Beach. The new pizza place offers two unique styles: “Beach Pizza,” a thin, crisp crust, with generous amounts of signature sweet sauce and premium blend of cheeses; and the “Detroit Red Top,” a rectangular pie, thick and fluffy, framed with a border of crispy golden cheese and topped with two stripes of savory organic tomato sauce. Passionate about the art of crafting pizza, the owners are hands on and focused on delivering thoughtfully crafted, delicious pizza. With a combined 20 years in the pizza industry, the owners spent years perfecting this new style of pizza, which included attending the King Arthur Baking School in Vermont and the Tony Gemignani’s International School of Pizza in San Francisco. “We wanted to create a special atmosphere in a beach location with a sense of community for locals, as well as, to attract tourists, all in a beautiful historical building, tying in our passion for traditional pizza making methods,” said Fred Santos, co-founder of Square Pizza Co..
Selling fresh pizza by the slice is their concept. The pizzas are 80 percent baked until they are customized, with toppings of choice, and then fully baked to order. Each pre-baked pizza stays out for a maximum of one hour; any pizza not sold within this time is then frozen, bagged and sold at a retail discount. Additionally, not leaving anything to waste and giving back to the community, frozen squares not sold within one week are donated to San Diego Food Bank. “We believe that not only should every pizza come out fresh, crisp and delicious, but that every slice of pizza should be perfect as well,” said Santos. “This is why we strive to ensure that each and every bite be as near to perfection as possible”. Located near the intersection of Garnet Avenue and Cass Street, locals are already becoming loyal fans and offering a warm welcome to the new pizza concept, according to Santos. The staff is very enthusiastic and knowledgeable about the subject and glad to give customers a comprehensive tour about the product and craft, as soon as they step inside.
