Original 40 Brewing has named La Jolla native Zack Kaplan as its new head brewer. He returns to San Diego after serving as the head brewer at Bonfire Brewing in Eagle, Colo., and Migration Brewing in Portland, Ore.
Kaplan began his career in the craft brewing industry in 2011, working for Green Flash Brewing Co. and subsequently Saint Archer Brewing Co. He left for Colorado in 2015 and enjoyed time with Denver Beer Co. and Upslope Brewing.
“The Original 40 North Park family is thrilled to welcome Zack as our head brewer,” said owner Steve Billings. “He has learned so much on the road and it’s great to see him settle back into his roots here in San Diego.”
Kaplan’s first three releases are already in the works and they are expected to be poured by early July. The list includes:
*All New Zealand dry hopped lager using heirloom pilsner malt with a light refreshing palate and hoppy finish;
*West Coast IPA using some of the best malts and hops sourced from the Pacific Northwest and inspired by some of his favorite brews;
*Double dry hopped Hazy Pale Ale featuring Citra, Mosaic and Nelson.
Kaplan, who studied mechanical engineering at UC San Diego after graduating from La Jolla High School, draws significant inspiration for his current projects from his time in Oregon. He is most passionate about West Coast IPAs and emerging lager styles.
