Coronado residents, Kevin Shaeffer and Neil Capin Jr., set out to achieve exactly that when they decided to open the doors of Pok\u00e9 1-2-3 \u2013 first in Imperial Beach, and now in Liberty Station.\u00a0<br \/>\n&#8220;San Diego customers are often time-strapped and want an affordable, fresh, fast, and healthy alternative to existing fast food or fast casual dining choices,&#8221; Shaeffer said. &#8220;Our offerings are a perfect fit for discerning, health conscious patrons of all ages. Active lifestyles are a hallmark of San Diego, and our menu items are designed to be very mobile \u2013 easy to eat as take out, to be enjoyed in community gathering spaces, as a working lunch at the office, or outside on the beach.&#8221;<br \/>\nCapin Jr. has many years of successful small business experience in the service and retail industry, while Shaeffer brings his expertise in due diligence, public communications, and operations management.<br \/>\n&#8220;It\u2019s been a great combination of strengths. We had been talking about a joint venture for a little while. Neil and his family had a great meal at a similar restaurant and told me about it. I had my first experience with traditional pok\u00e9 in Hawaii when I was in the Navy, and it was a concept we both quickly became excited about,&#8221; Shaeffer said.<br \/>\nThe term &#8220;pok\u00e9&#8221; comes from the Hawaiian language and refers to the action of slicing, sectioning, or cutting. The menu offers many protein options, including premium seafood, free-range chicken, and vegan organic tofu.\u00a0<br \/>\n&#8220;Offering creative, thoughtfully prepared options for non-seafood lovers and vegans was an important goal for our company,&#8221; said Shaeffer. &#8220;For instance, all of our gourmet sauces are vegan-friendly. We also have a simple 1-2-3 step ordering process to make our craft pok\u00e9 bowls, and round out our \u2018123 styles\u2019 with delicious \u2018norritos\u2019 (seaweed burritos) and signature \u2018123 waves\u2019 (small seaweed hand wraps).<br \/>\nPok\u00e9 1-2-3 also extends 10 percent off in-uniform purchases by the military community, as well as federal, state, and local first responders.<br \/>\nPossibly the best thing about their menu?
