And now it\u2019s offered on tap at several local eateries.<\/p>\n<p>Kombucha, a fermented drink that&#8217;s more likely to be found in bottles, can now be found fresh from the keg, thanks to the San Diego County-based company, Kombucha on Tap (KOT).<!--more--><\/p>\n<p>\u201cPeople like to be served from as close to the source as possible, and the tap program certainly helps to eliminate some of the dissonance associated with bottled beverages,\u201d said Evolution Fast Food\u2019s general manager Zach Vouga. \u201cThey\u2019re excited, we\u2019re excited. It\u2019s great.\u201d<\/p>\n<p>The Bankers Hill restaurant is just one of about a dozen locations where the freshly brewed drink can be found in the region \u2014 just a few months after KOT was created.<\/p>\n<figure id=\"attachment_18376\" aria-describedby=\"caption-attachment-18376\" style=\"width: 650px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/sduptownnews.com\/wp-content\/uploads\/2014\/09\/photo-1-12web.jpg\"><img decoding=\"async\" class=\"wp-image-18376 size-full lazyload\" data-src=\"https:\/\/sduptownnews.com\/wp-content\/uploads\/2014\/09\/photo-1-12web.jpg\" alt=\"photo 1-12web\" width=\"650\" height=\"485\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 650px; --smush-placeholder-aspect-ratio: 650\/485;\" \/><\/a><figcaption id=\"caption-attachment-18376\" class=\"wp-caption-text\">Kombucha is now poured at multiple locations in North Park and Normal Heights. (Courtesy Kombucha On Tap)<\/figcaption><\/figure>\n<p>KOT owner Deanne Goodman said it\u2019s attracted a number of business owners for many reasons.<\/p>\n<p>\u201cKOT is more financially efficient for restaurants than just selling bottles of Kombucha,\u201d Goodman said. \u201cIt offers a better price point for them and a fresh, even better tasting product to the consumer.\u201d<\/p>\n<p>Jared Gustafson, Goodman\u2019s fiance and business partner, said the two discovered the product during a trip to Oregon.<\/p>\n<p>\u201cWe noticed Kombucha on tap everywhere, even in gas stations,\u201d Gustafson said. \u201cSince the healthy lifestyle in Oregon seemed to mirror our healthy lifestyle in San Diego, we wondered why it wasn\u2019t being offered on tap yet all over Southern California.\u201d<\/p>\n<p>Gustafson said the two Kombucha fans decided to bring the concept to the region. For Evolution Fast Food, Kombucha on tap was a welcomed addition.<\/p>\n<p>Vouga said the restaurant launched its tap program just a few weeks ago and has plans to discontinue its bottled Kombucha.<\/p>\n<p>\u201cThere\u2019s something distinguished about a tap setup that I find particularly alluring,\u201d Vouga said. \u201cWe have always carried bottled Kombucha in the past but are now phasing them out.\u201d<\/p>\n<p>The restaurant also offers \u201cKombucha floats,\u201d which pairs Kombucha with vanilla ice cream.<\/p>\n<p>But Kombucha on tap doesn\u2019t just leave a better taste in the mouth \u2014 it\u2019s also environmentally friendly, said Goodman.<\/p>\n<p>\u201cIt\u2019s helping businesses lower their carbon footprint because kegs are refillable,\u201d Goodman said.<\/p>\n<p>Businesses like Normal Heights&#8217; Dark Horse Coffee Roasters are loving the new product. Owner Bryan Charlson said the restaurant goes through about two to three kegs per week.<\/p>\n<p>\u201cHaving Kombucha that magically comes out of a wall is pretty incredible,\u201d Charlson said. \u201cOur customers, and employees alike, absolutely love it especially with this sunny San Diego weather.
