Commonly called cold potato soup, this recipe is delicious, a little sophisticated, and an easy dish to make! Serves 10 people.<\/p>\n

Ingredientes:<\/strong><\/p>\n

  • 6 tablespoons butter<\/li>\n
  • 6 large russet baking potatoes peeled and cut into 1-inch cubes<\/li>\n
  • 8 leeks, washed well to remove any dirt and cut into thin slices (white part of the leek only)<\/li>\n
  • 9-10 cups of good organic chicken broth<\/li>\n
  • 2 cups heavy cream<\/li>\n
  • Salt and pepper to taste<\/li>\n
  • 4 tablespoons thinly sliced chives for serving<\/li>\n<\/ul>\n

    In a heavy Dutch oven or deep pan, melt the butter. Add the leeks and soften them, but do not brown.<\/p>\n

    Add the broth and the potatoes and cook for 20 minutes.<\/p>\n

    Cool slightly and with an emersion blender, puree the soup until silky. You can also put small batches of the cooked soup in a blender to puree.<\/p>\n

    Add the cream and and salt and pepper to your taste. Cool in the fridge. Pour into chilled bowls, add a splash of cream and the chives.<\/p>\n
