We talk fast, work fast, play fast, and go right on to the next thing. Often eating a meal gets shoved somewhere in between there.<\/p>\n<p>According to the nonprofit DoSomething.Org, <a href=\"https:\/\/www.dosomething.org\/facts\/11-facts-about-american-eating-habits\" target=\"_blank\" rel=\"noopener\">20 percent<\/a> of all American meals are eaten in the car.<\/p>\n<p>The Pew Research Institute noted that in 2016 there were 160,000 fast food restaurants that <a href=\"http:\/\/www.statisticbrain.com\/fast-food-statistics\/\" target=\"_blank\" rel=\"noopener\">served 50 million Americans<\/a> a day.<\/p>\n<p>The Center for Disease Control and Prevention\u2019s studies found in 2015 that about 34 percent of all children aged 2 to 19 consume fast food on any given day \u2013 that\u2019s almost one in every three kids!<\/p>\n<p>Even if you\u2019re eating out or purchasing food from a sit-down restaurant, something that the average American does 5.8 times a week, it\u2019s still likely that food contains more preservatives, sugar, oil, and fat than food made with fresh ingredients at home where you know what you\u2019re cooking.<\/p>\n<p>As the United States Healthful Food Council put it, \u201cYou are what you eat \u2013 and where you eat.\u201d<\/p>\n<p>So the online food magazine Epicurious makes an annual challenge to its readers to change that cycle for one month.<\/p>\n<p>Halt for a moment and make where and what you eat at home (one more statistic, also from the Food Council &#8211; <a href=\"http:\/\/ushfc.org\/about\/#fancy-form-delay\" target=\"_blank\" rel=\"noopener\">half of American food dollars go<\/a> to eating out).<\/p>\n<p>That means three meals a day, every day, for an entire month. Epicurious calls it <a href=\"http:\/\/www.epicurious.com\/expert-advice\/cook90-90-meals-recipes-tips-articles-package\" target=\"_blank\" rel=\"noopener\">#cook90<\/a>.<\/p>\n<p>The magazine is dedicated to people who love food and enjoy cooking, but even for them it can still be a push to plan ahead, get to the kitchen, and stay in the kitchen, for 90 meals for a month.<\/p>\n<p>One of the people who accepted that challenge with gusto is La Mesa resident Brittany Brookins.<\/p>\n<figure id=\"attachment_4079\" aria-describedby=\"caption-attachment-4079\" style=\"width: 605px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2017\/02\/web-MAIN-DSCN0946.jpg\"><img decoding=\"async\" class=\"size-full wp-image-4079 lazyload\" data-src=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2017\/02\/web-MAIN-DSCN0946.jpg\" alt=\"Challenge accepted: 90 meals in 30 days\" width=\"605\" height=\"350\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 605px; --smush-placeholder-aspect-ratio: 605\/350;\" \/><\/a><figcaption id=\"caption-attachment-4079\" class=\"wp-caption-text\">Brittany Brookins prepares a meal at home for the #cook90 challenge. <em>(Photo by Joyell Nevins)<\/em><\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>Brookins has long found her solace and joy in the kitchen, but knew the challenge would still be that, as she and her husband normally ate out at least twice a week.<\/p>\n<p>Plus, Epicurious also encourages its readers to get creative with those three meals and re-use ingredients in different ways.<\/p>\n<p>\u201cWhen I first heard about it, I thought \u2018that sounds interesting, but I think I could do it\u2019,\u201d Brookins said.<\/p>\n<p>And her meals haven\u2019t been just scrambled eggs and lunch meat sandwiches. Brookins has been making jambalaya, pasta fagoli, herb-crusted salmon, New York strip, and prime rib with garlic, thyme and rosemary (which husband Robbie gushed as being \u201cnext level\u201d).<\/p>\n<p>\u201cI do have a taste for the finer things in life,\u201d Brittany said with a laugh.<\/p>\n<p>This month, Brittany has also gained experience with what Epicurious calls \u201cnext-overs\u201d \u2013 incorporating leftovers or ingredients from one meal into the next. For example, if she uses guacamole for dinner one night, she\u2019ll make avocado toast the next morning.<\/p>\n<figure id=\"attachment_4105\" aria-describedby=\"caption-attachment-4105\" style=\"width: 225px\" class=\"wp-caption alignright\"><a href=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2017\/02\/web-challenge2.jpg\"><img decoding=\"async\" class=\"size-medium wp-image-4105 lazyload\" data-src=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2017\/02\/web-challenge2-225x300.jpg\" alt=\"Challenge accepted: 90 meals in 30 days\" width=\"225\" height=\"300\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 225px; --smush-placeholder-aspect-ratio: 225\/300;\" \/><\/a><figcaption id=\"caption-attachment-4105\" class=\"wp-caption-text\">Eating home-made meals like this herb-crusted salmon with salad and<br \/>asparagus saves families money and promotes good health.<\/figcaption><\/figure>\n<p>Brittany admitted the first week of the challenge was rough, but she\u2019s been getting into a groove.<\/p>\n<p>\u201cYou get up, make breakfast, plan dinner \u2013 it gets into a habit,\u201d she said. \u201cIt\u2019s been a learning experience.\u201d<\/p>\n<p>Learning is part of the name of Epicurious\u2019s game. Their writer David Tamarkin put it this way, \u201cA person can&#8217;t cook every day for an entire month and not be better at it than when they started.\u201d<\/p>\n<p>Brittany grew up in the kitchen, joking that she\u2019s been \u201cburning chocolate in the microwave since I was seven.\u201d<\/p>\n<p>Although she lived with her family in Hawaii where her dad was stationed as a Marine, it was Brittany\u2019s grandmother in Rhode Island that instilled in her a love of cooking.<\/p>\n<p>When they would visit for vacation or family reunions, Brittany and her Italian grandmother would make cuisine like doughboys and cookies, homemade meatballs, and a special red sauce called \u2018Sunday gravy\u2019.<\/p>\n<p>\u201cSunday gravy is still one of my favorite meals,\u201d she said.<\/p>\n<p>One of Brittany\u2019s most prized possessions is a cookbook called \u201cFrom Nana\u2019s Kitchen.\u201d<\/p>\n<p>For a wedding present, Brittany\u2019s aunt made her a binder compiled of copies of her grandmother\u2019s favorite recipes. Some are torn out of magazines and newspapers, others are written down in her grandmother\u2019s own hand.<\/p>\n<p>Brittany also draws inspiration from the Food Network and the iconic Martha Stewart.<\/p>\n<p>\u201cI like Martha Stewart a lot,\u201d Brittany gushed, \u201cShe\u2019s amazing.\u201d<\/p>\n<p>Brittany consults Julia Childs\u2019 cookbooks for her \u201ctimeless\u201d techniques, and has recently dived into Chrissy Teigen\u2019s \u201cCravings: Recipes for All the Foods You Want to Eat.\u201d<\/p>\n<p>But for Brittany, cooking isn\u2019t just a way to try new recipes and feed loved ones. It\u2019s also a stress reliever. Life can be chaotic and frustrating sometimes. But in the kitchen, life can have an order and a set process.<\/p>\n<figure id=\"attachment_4106\" aria-describedby=\"caption-attachment-4106\" style=\"width: 225px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2017\/02\/web-DSCN0950.jpg\"><img decoding=\"async\" class=\"size-medium wp-image-4106 lazyload\" data-src=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2017\/02\/web-DSCN0950-225x300.jpg\" alt=\"Challenge accepted: 90 meals in 30 days\" width=\"225\" height=\"300\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 225px; --smush-placeholder-aspect-ratio: 225\/300;\" \/><\/a><figcaption id=\"caption-attachment-4106\" class=\"wp-caption-text\">Local family eats nothing but homecooked meals for a month.<\/figcaption><\/figure>\n<p>That process is something her husband has learned to appreciate (and probably has caused the loosening of a belt loop or two).<\/p>\n<p>They met each other after Brittany\u2019s family moved back to the states.<\/p>\n<p>Robbie was stationed with the Navy in Virginia Beach, and ended up being the roommate of a casual date of Brittany\u2019s.<\/p>\n<p>There was nothing special with the date himself, Brittany noted, but sparks flew with Robbie.<\/p>\n<p>There were many more times spent together after that, but it was a moment at the family meal table that cinched the relationship.<\/p>\n<p>\u201cHe told me \u2018your family has taught me that butter and garlic make everything better,\u2019\u201d Brittany said, smiling, \u201cThat\u2019s when I knew we\u2019d be together for good.\u201d<\/p>\n<p>The Brookins were married on Dec. 30, 2015, and in May 2016, moved to San Diego for his latest assignment. Robbie is a diver who helps maintain the ships in the harbor.<\/p>\n<p>Brittany is currently going to college for environmental science. Her next challenge?
