The black-eyed peas are supposed to bring you good luck in the coming year. <!--more-->It was shared with me by my good friend Pam Crooks, a Southern girl from North Carolina. Happy New Year and hope you have a great\u00a02017!<\/p>\n<p><strong>Ingredientes:<\/strong><br \/>\n2 tablespoons of olive oil<br \/>\n1 large ham hock (ham, smoked turkey or bacon can be substituted)<br \/>\n1 pound of fresh black-eyed peas (or you can use dried peas and soak them in cold water for six hours. Rinse well before using. Black-eyed peas are also found in the freezer section)<br \/>\n1 yellow onion, chopped<br \/>\n1 stalk of celery, chopped<br \/>\n1\/2 cup of red or green bell pepper<br \/>\n1 quart of chicken stock<br \/>\n2 cups of water<br \/>\n2 carrots, diced<br \/>\n1 bay leaf<br \/>\nSalt and pepper to taste<br \/>\n1 tablespoon of apple cider vinegar<br \/>\n3 cups of steamed white or brown rice<br \/>\nChopped green onion or chopped parsley for garnish<\/p>\n<p>*You can also add chopped garlic, canned chopped tomatoes, chopped or frozen kale or collards if you desire.<br \/>\n<a href=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2016\/12\/hoppinjohn2.jpg\"><img decoding=\"async\" class=\"alignright size-medium wp-image-3552 lazyload\" data-src=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2016\/12\/hoppinjohn2-300x201.jpg\" alt=\"What\u2019s Cooking with Julie: Hoppin&amp;#039; John\" width=\"300\" height=\"201\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 300px; --smush-placeholder-aspect-ratio: 300\/201;\" \/><\/a><br \/>\n<strong>Direcciones:<\/strong><br \/>\nHeat oil in large pot.<\/p>\n<p>Add the veggies and brown.<\/p>\n<p>Add the ham hock and remaining ingredients except the rice and garnish.<\/p>\n<p>Bring to a boil, reduce heat and simmer for 45 minutes or until tender.<\/p>\n<p>You may need to add more water.<\/p>\n<p>Taste for seasonings.<\/p>\n<p>Serve over the rice and sprinkle garnish over dish and enjoy!<\/p>","protected":false},"excerpt":{"rendered":"<p>By Julie White Hoppin\u2019 John is a classic Southern dish served on New Year\u2019s Day.
