They are delicious served warm or cold. This recipe serves up to four people and is perfect for breakfast or as a dinner served with a side with a salad.<!--more--><\/p>\n<figure id=\"attachment_1559\" aria-describedby=\"caption-attachment-1559\" style=\"width: 300px\" class=\"wp-caption alignright\"><a href=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2015\/09\/DSC_1782.jpg\"><img decoding=\"async\" class=\"size-medium wp-image-1559 lazyload\" data-src=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2015\/09\/DSC_1782-300x201.jpg\" alt=\"Swiss Chard Frittata (Photo by Julie White)\" width=\"300\" height=\"201\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 300px; --smush-placeholder-aspect-ratio: 300\/201;\" \/><\/a><figcaption id=\"caption-attachment-1559\" class=\"wp-caption-text\">Swiss Chard Frittata (Photo by Julie White)<\/figcaption><\/figure>\n<p><strong>Ingredientes:<\/strong><\/p>\n<p>1 bunch fresh Swiss chard (about 10 leaves)<br \/>\n-Ribs removed, and cut into 1\/2-inch strips<br \/>\n2 cloves garlic, minced<br \/>\nSalt and pepper to taste<br \/>\n4 green onions, thinly sliced (green and white part)<br \/>\n1 zucchini, chopped<br \/>\n1\/2 red bell pepper, seeded and chopped<br \/>\n1 cup ricotta rheese<br \/>\n1\/2 cup\u00a0grated Parmesan cheese<br \/>\n8 eggs beaten<br \/>\n1\/4 taza de aceite de oliva<\/p>\n<p>Preheat oven to 350 degrees<br \/>\nHeat 1\/4 cup oil in an oven-proof skillet (I use a cast iron skillet).<br \/>\nCook the vegetables till tender. Remove from pan.<\/p>\n<p>Whisk eggs in a large bowl and add the cheeses, seasonings, and cooked veggies.<\/p>\n<p>Heat skillet with remaining oil (you can add a pat of butter for flavor).<\/p>\n<p>Slowly add the eggs, cheese and veggies and cook over low heat until the frittata is slightly done.<\/p>\n<p>Pop into preheated oven and cook for 10 minutes.<\/p>\n<p>Cool slightly before eating.<\/p>\n<p><em>\u2014Julie White is a La Mesa resident who loves to cook.
