You can use classic orange carrots, but to make this recipe extra special, try the multi-color variety that come in bags at Trader Joe\u2019s, Sprouts or Vons. The colors give the salad a lovely look reminiscent of fall.<!--more--><\/p>\n<p><strong><a href=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2015\/08\/LMC_0915_20Page.jpg\"><img decoding=\"async\" class=\"alignright size-full wp-image-1421 lazyload\" data-src=\"https:\/\/lamesacourier.com\/wp-content\/uploads\/2015\/08\/LMC_0915_20Page.jpg\" alt=\"LMC_0915_20Page\" width=\"270\" height=\"294\" src=\"data:image\/gif;base64,R0lGODlhAQABAAAAACH5BAEKAAEALAAAAAABAAEAAAICTAEAOw==\" style=\"--smush-placeholder-width: 270px; --smush-placeholder-aspect-ratio: 270\/294;\" \/><\/a>Salad:<\/strong><\/p>\n<p>3 to 4 large carrots \u2014 or 6 to 8 smaller carrots \u2014 julienned (sliced like matchsticks)*<\/p>\n<p>2 tablespoons toasted sesame seeds<\/p>\n<p>1\/2 cup dry roasted peanuts, chopped<\/p>\n<p>1\/2 cup golden raisins<\/p>\n<p>2 tablespoons cilantro, chopped<\/p>\n<p><strong>Dressing:<\/strong><\/p>\n<p>2 tablespoons olive oil<\/p>\n<p>Juice of 1 lemon<\/p>\n<p>1 garlic clove crushed<\/p>\n<p>1\/2 teaspoon sugar<\/p>\n<p>1\/2 teaspoon ground cumin<\/p>\n<p>Salt and pepper to taste<\/p>\n<p>In a large bowl, mix the salad ingredients together. In a smaller bowl, mix the dressing ingredients. Pour the dressing over the salad and mix well.
