Culinary sweethearts open shop

Sweet and Savory Café opened at 4614 Mission Blvd. to offer gourmet sandwiches with hand- seasoned-and-sliced meats, hand-whipped mayonnaises and onsite-baked bread. Each sandwich has its own twist, like the Cuban-style with homemade pepperoni chili relish or the spicy Asian wrap with a peanut-chili crusted chicken breast. Husband and wife ownership team, Michael and Alle Karijanian, who met in culinary school, run the café that is open for breakfast and lunch seven days a week from 8:30 a.m. to 3:30 p.m. “For three days I thought about what I wanted,” Michael said. “I envisioned sandwiches with specialty made spreads and flavored mayos, and we went from there. My goal is to bring sandwiches to a whole new level, and I try to let the ingredients speak for themselves.” Michael trusts that a loud enough statement will be made by the six different mayonnaises they prepare, including cranberry, horseradish gorgonzola, guacamole, teriyaki, lemon roasted garlic, or tangy buffalo wing mayo. The sauces spread across turkey, chicken, pork tenderloin, roast beef and tri-tip that employee Jack, a retired butcher of 33 years, carves up. “We take the unprocessed meat directly from the provider and we marinate, dry-rub, brine and then cook the meat ourselves,” Michael said. “Then the meat is hand-carved to order.” For the veggie lover, the café offers gourmet salads (ice-berg lettuce free), and veggie deluxe sandwiches like the portabella, roasted vegetables, or caprice with the chef’s special Asiago pesto. The couple met in a culinary class at the Art Institute of San Diego. “The class was on baking and pastries. I really didn’t care for the class, and Alle only distracted me more,” Michael said. The opening of their restaurant will come only a month before Alley is due to give birth to their first child, Grayce.
