A sandwich shop, a meat shop, a place to pick up a last-minute meal or a healthy salad, Roast is a fast-casual restaurant that opened last year in Liberty Public Market at Liberty Station. “Roast is all about roasted meat. It is sort of the star of the show,” said Maryanne Carmack, who is the owner and director of operations at Roast. Roast is especially known for their heritage pork product that they get from a small farm in Iowa, which has no hormones or antibiotics. All the food at Roast is made in-house, so they make it from scratch every day. They make the food right in front of you and you can take it with you right away. They also have a lot of allergy-friendly options. “We produce food that is healthy and good for you and that makes you feel good about yourself,” said Carmack. Carmack first opened a Roast in Victoria in British Columbia, Canada, four years ago, but she often traveled to San Diego and wanted to open a new restaurant here. She decided to open the Roast at Liberty Public Market because she wanted it to be located among other local restaurants. “We wanted our neighbors to be like-minded local business owners and we wanted to work with people in our community,” said Carmack. At the moment, Carmack is looking at locations in downtown and Little Italy to open another Roast restaurant. She plans to open more restaurants in the future. “We are a good alternative for people who don’t have time to cook at home, but still want to eat good food that tastes great,” said Carmack.
